Health Benefits of Shiitake Mushroom
Studies say shiitake mushrooms contain an active compound called lentinan. Lentinan strengthens the ability to fight infection and disease, and is also known to be very effective against influenza and other viruses. When buying shiitake mushrooms, look out for ones that are firm, plump and clean. Avoid wrinkled and ones with wet slimy spots. You can store loose shiitake in a loosely closed paper bag in the refrigerator. They will keep fresh for about one week.
What's In Season?
Napa Cabbage has a mild sweet taste and is usually added to stir-fries and soups or is eaten raw in salads. Like tofu, it absorbs the flavors of the foods around it. It is known to be healthier than western cabbage. It is rich in vitamins and thus helps protect your skin and eyes. Look for firm tighthly packed heads with green leaves that are not wilted or eaten by bugs. You can store tightly wrapped Napa cabbage in the refrigerator for up to three days.
