BARBECUED DUCK SKEWERS

Ingredients

1 Duck Breast
4 Wooden BBQ Skewers

For Marinade
1 Tablespoon Hoisin Sauce
1 Pinch 5 Spice
1 Teaspoon Red Miso
1 Teaspoon Mirin
1 Stick Lemongrass-chopped
1 Teaspoon Ginger – finely chopped
1 Teaspoon Orange Juice

For Garnish
2 Pinches Sansyo Pepper
1 Kaffir Lime Leaf – sliced thin
1 Thai Chili – sliced thin
2 Cilantro Leaves – finely chopped
¼ Fresh Lime for juice

Preparation

Score Duck Breast and then cut into bit-sized pieces.
Combine Marinade ingredients together.
Place duck breast pieces and marinade in a container and allow to marinate in the fridge for 2 hours.
Place 4 to 5 marinated duck pieces on skewer.
Place on BBQ grill with skin side down.
Cook duck skewers approximately 5 to 7 minutes, turning the skewers in between.
Plate skewers and sprinkle Sansyo Pepper on top.
Toss together the remaining garnish ingredients and sprinkle on top of the skewer.
