American Kimchi Medley ( 4 to 6 side dishes)

| Ingredients:
vegetables
2 tablespoons vegetable oil or olive oil
2 sesongi fresh mushroom cut into strips
1 medium sweet onion slices in thin strips
3 Tbs. soy sauce
1 red bell pepper, sliced in strips
1 green bell pepper, sliced in strips
3/4 cup kimchi
1 spring onion (cut into very thin strips for
garnish)

Method
Heat the oil in a large skillet or sauté pan over medium
heat. Wait until the oil gets hot, (the vegetables
should sizzle in the pan), and add the onions, the bell
peppers, then the soy sauce constantly stirring until
they become fork tender, 3 to 4 minutes. Add the
mushrooms and kimchi and stir-fry for another 2 minutes,
(If the pan starts to dry, slowly add in 1 to 2 Tbs. of
water.)
Remove from the heat and serve as a side dish when all
items are fork tender, finishing with the spring onion
garnish. |
