What's In Season?
 

Pea shoots are very nutrient-dense vegetable. For very few calories, you get large amounts of vitamins and minerals. They also contain carotenes (strong antioxidants) that protect cells from damage. You can buy pea shoots from Asian grocery stores at this time of year. Select ones that are bright green and have less tendrils and shorter stems. They are best used within one to two days of harvesting. To ensure freshness, wrap pea shoots in paper towels in an open plastic bag and store them in your refrigerator. Pea shoots can be eaten raw or

 

lightly cooked. You may also fry them in wok with minced garlic. To prepare, rinse with cool
water, drain and dry. Use only the tender parts of the stem.. Pea shoots don't need more than a few seconds of cooking.
